Krista Stawarz, MS, RDN, LDN is available for complimentary consultations on topics such as:

Krista has a Bachelor of Science in Nutrition, Dietetics, and Wellness and a Master of Science in Nutrition and Dietetics both from Northern Illinois University. Krista’s nutrition approach is to create a non-judgmental atmosphere where she can help individuals develop positive relationships with food. Her passion is to help individuals with food allergies, weight management, and heart disease. As a Registered Dietitian, Krista is dedicated to supporting students achieve their health and wellness goals. Her role allows her to provide ideas on meals that are both nutrient-rich and budget-friendly. She is a great resource on learning how to navigate the dining halls.

Food Allergies
We take pride in serving you wholesome ingredients, preparing recipes accurately and providing nutritional analysis and ingredient statements through our online menus and nutrition calculator. From our general manager to our front line servers, we work carefully to address food allergies, celiac diets, or other special dietary needs.

Mindful
Locate a healthier choice! All Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each Mindful item is limited in calories, has fewer than 30% of calories from fat, fewer than 10% of calories from saturated fat, and is restricted in sodium and cholesterol. Vegetarian
Menu items with the vegetarian icon contain no meat, fish or poultry, or any meat products such as soup base. Our vegetarian offerings meet the needs of lacto-ovo vegetarians and may include eggs and/or dairy products.
Vegan
Vegan offerings contain no meat, fish, eggs, milk or other animal-derived products such as honey.
Gluten free
variety of gluten-free items across campus and can accommodate customers with foods that are free from gluten-containing ingredients and protected against cross-contact with gluten.

How are food allergies/dietary needs handled in the dining halls?
We want to help!
- We want to meet one-on-one with anyone who has individual dining needs to ensure that your dining experience is safe, delicious, and social. For students with medical conditions that impact their ability to dine well on campus, we strongly encourage a conversation with our Registered Dietitian, Executive Chef, and/or General Manager. In many instances, our dining team can easily assist with special needs. - Occasionally, Dining Services cannot meet a student’s medical needs within normal service. We may require additional medical documentation to enable us to develop a more specific meal plan accommodation. In this situation, please visit the Disability Resource Center web page for details and instructions on how to submit a meal plan accommodation request. This process is for those with medically documented diagnosis/-es that need to request special dining accommodations or have medically prescribed diet plans for the treatment of a medical condition. Together, our departments work to serve our students with medical needs related to dining on campus.

What is Simply3?
- The Simply3 station at JST provides safe and appetizing food choices for our customers with food allergies and gluten intolerance. All foods served at this station are prepared with ingredients that do not contain milk, nuts (peanuts and tree nuts), or gluten. The station uses separate equipment/utensils, preparation areas, and storage areas to minimize the potential of allergens or gluten in our Simply3 foods.
- The menu rotates daily and includes a variety of protein (i.e., chicken, beef, lentils), vegetables (i.e., broccoli, carrots, green beans), and starches (i.e., rice, potato, quinoa. There is a salad option available too.
- The station is incorporated into the servery to allow students, even those without allergy concerns, to enjoy the wholesome food selections. We ask that guests do not bring food from other stations and only use the plates provided by our servers at Simply3.
- Simply3 team members are carefully trained to prepare and serve safe food. We provide training throughout the year for all employees and our managers and supervisors also hold AllerTrainU™ certificates.
- While the Simply3 station is designed to allow customers an easy way to avoid allergens and gluten, we encourage our customers with special dietary needs to connect with our chef, registered dietitian, and general manager to ensure an enjoyable dining experience. What is Simple Zone?
Simple Zone is a self-serve pantry, located at JST Dining Hall, where students with food allergies or celiac disease can select items free of gluten, nuts, peanuts, and/or dairy to augment their breakfast, lunch, or dinner. Gluten-free, nut-free, and/or dairy-free versions of condiments, cereals, bread, bagels, tortillas, pastries, desserts, and milk are some of the pantry staples students have access to in Simple Zone. Dedicated Simple Zone appliances like a toaster and microwave reduce the risk of cross-contact during food preparation. Heat and eat meals can also be kept in Simple Zone’s reach-in refrigerator for additional meal options. Vegan & Vegetairan Options
Yes, UIC Dining offers a variety of vegetarian and vegan options at all dining locations. Our team ensures that these options are clearly labeled and readily available. VegetarianMenu items with the vegetarian icon contain no meat, fish or poultry, or any meat products such as soup base. Our vegetarian offerings meet the needs of lacto-ovo vegetarians and may include eggs and/or dairy products. VeganVegan offerings contain no meat, fish, eggs, milk or other animal-derived products such as honey. UIC Dining also offers a plant-based serving line in both SCE and JST Dining Halls called Grown. This station offers a protein, starch, vegetable, and toppings/dressings so the student is able to create a complete plant-based meal.

Look for the Mindful icon to indulge in the healthy and delicious items offered at each meal.
Where can I find more information on the menus and ingredients?
- Please download the Everyday App to view our Dining Hall’s menus. To start, enter in University of Illinois Chicago for the location. Guests will then be able to view the menus available in both dining halls on campus. The app categorizes the menu by station. Guests are then able to click on the different menu items to view the nutrition information, ingredients, and allergen information.
- Our menus provide statements specifically highlighting the big nine allergens (milk, eggs, shellfish, fish, tree nuts, peanuts, wheat, soy, sesame) and gluten. Guests may check on the presence of allergens prior to planning their meals using the online menu or Everyday App. The information is also posted on menu boards in the dining center. The absence of an allergen listed on posted or electronic signage is not a guarantee that the product is free of that allergen as other recipes are prepared in the kitchen that do contain food allergens. The guest is responsible for communicating their allergy to a manager to ensure safety.
